spicy-ass lentils and veggies

1 cup lentils, cooked
1/2 white onion, chopped
1 green bell pepper, chopped
2-3 cloves garlic
1/2 zucchini, sliced
10 oz grape tomatoes, quartered
whatever amount of jalapenos you can handle, chopped

equal parts of:
olive oil
red wine vinegar

in a pan, throw in some olive oil and heat up on medium/high heat. throw in green pepper, zucchini, onion, and garlic, sautee until tender. throw in tomatoes and jalapenos, add a bit more oilive oil and add red wine vinegar. continue to cook for a bit, then throw in lentils, folding in until everything is evenly mixed. salt to taste. let simmer until you dont feel like it needs to simmer anymore. serve with either brown rice, pita, or in my case, the whole wheat pita chip remnants from the bottom of the bag.

coffee makes things better. yes.

cashier: do you want to know the remaining balance on your card?
me: uh...*shifty eyes* no, that's ok. its probably a lot.
cashier: i should say so! you can come back here, like, a hundred more times!

also i am totes making this this weekend:

it looks like this:

its weird, i'm not a vegetarian. i love meat. however, i've been too lazy as of late to cook meat. lately i've been relying on my tubs o' tofu and my frozen edamame. nom nom. then i'll eat a big ole steak and all will be well with the universe.

no pants pancake saturday

this week's pancake: chocolate chip raisin.

1 cup bisquick
1/2 cup milk
1 egg
1 tbsp sugar
1 tsp baking powder
1/2 tsp vanilla
2 tsp cocoa powder

i lacked chocolate chips, but i had an organic chocolate raisin bar from giant eagle, so i chopped that up and put it in.

this only makes like 5 pancakes, seeing as its just me and boog.

thursday i made this:

chicken and pesto pizza with pine nuts, tomatoes, and mozzarella. garlic and romano cheese in the crust. i didnt pre-bake the crust enough so the inside was a little soggy, but otherwise delicious.

boog had another bout of the linda blairs yesterday. he just would not keep anything down save for pedialyte. not to point any fingers, but who thinks its a good idea to feed a child grilled cheese if said child is throwing up? i do not understand.

he is loads better today, as he ate some applesauce, string cheese *and* a pancake with no adverse effects.

boog told me that his favorite show was dora. i was about to stab my eyes out in despair when the backyardigans came on and he exclaimed that *that* was his favorite show. crisis averted.

every single song that the backyardigans sing sounds like a funeral dirge. why is that?
