MINT, FIG, AND FETA STUFFED LAMB BURGERS
makes 4 burgers
you will need:
- to come to my house to pick up some mint. no really, please:
this is only 1/4 of it.
after that, chop it up to make 1 cup.
- 2 lb. ground lamb
- 2 cloves garlic
- 1/8 c. fresh oregano, chopped
- 4 dried figs
- 1/2 cup feta cheese
mince garlic and oregano, combine thoroughly with ground lamb in a bowl. add salt and pepper to taste if you want. divide into 8 balls.
take two balls at a time, flatten into way, way huge flat patties. on one, place 1/4 of the mint, 1/4 of the dried figs, and 1/4 of the feta cheese in the center with plenty of room around the edge of the burger.
take the other patty and place it on top, pinching and folding the edges so the contents are sealed. you can then smoosh the whole thing in around the edges so its thicker.
repeat 3 more times.
serve with a spoonful of plain yogurt on top. also pictured: baked kale chips with lemon and garlic, and cucumber slices.
and yes, we had dessert:
that's 85% chocolate mousse with blueberries. yes i made that too. no sugar in this whatsoever except what was in the chocolate. oh, and the blueberries.
