and by a bit, i mean a lot.
turkey curry meatza!
you will need:
2 lbs ground turkey [beef will do, too. even better - ground steak]
1-1.5 c. coconut milk
a handful of baby carrots
eh, about 2c. spinach
2 T green or red curry paste
1 spoonful coconut oil
1/4 T cumin
1/2 T cinnamon
1/4 t cayenne [optional]
in a large bowl, break your eggs and beat them until smooth. throw in your ground turkey, and mush it in with the eggs until well combined. add the cumin, cinnamon, and optional cayenne, and seriously, just use your hands and mix everything together.
take a small cookie sheet and spread the meat out to the ends. make sure that it's all a uniform thickness. sprinkle more cinnamon on top of the crust. no, you want to. throw that in the oven at 375 for about 20 minutes.
while the crust is baking, combine coconut milk and curry paste in a saucepan. heat and simmer for about 5 minutes or so. take off heat and let it set up. as it cools it should thicken.
in a frying pan, sautee the carrots and spinach in coconut oil until slightly soft.
there's going to be a lot of juice from the turkey. drain that. it should be a bit brown on top, if not, throw it under the broiler for a few minutes. drain all the extra juice, and like the meatza recipe, use a paper towel to suck up the extra accumulated grease in the crevices.
spread the coconut milk sauce on the crust and spread it to the edges. top with carrots and spinach.
throw that bad boy back under the broiler for a few more minutes, until you see the spinach and carrots get a little crispy.
let cool a bit, cut into 6 slices, and enjoy!
