Shaggy!

I've been fiddling about with how I make my kefir and I'm really enjoying it. I'm making the kefir itself in full fat milk. Then when I make a shake with it at night I put it with low fat milk, lots of berries, a banana but I've substituted half the honey for some brown sugar and tonight I added a little bit extra milk into the shake and gotten it to thinner consistency I find much more pleasant to drink - thus I drank 2 glasses of it tonight rather than the usual 1. Yay! *pats self on back*

Delicous Soup :D

Potato and Leek Soup

Ingredients:

35grams butter
1 onion finely chopped
3 cloves garlic crushed
2 leeks finely chopped
600 - 800 grams desiree potatoes - peeled and cubed
3 cups veggie stock
1 X 375 ml tin light evaporated milk

Method:

Melt butter into a pot and saute leeks, onion and garlic for 5-10 mins
Add in the spuds and cook for a further 5 mins
Add veggie stock and simmer uncovered until spuds are tender
Take off heat and puree
Put back on heat and add milk, plus salt and pepper to taste
Bring to the boil

Serve with crusty hot sour dough bread.

Tasty Vegetable and Bacon Frittata Style Omelettes

This recipe makes enough for 9 little omelettes (feeds 3 people) i made them last night and they were very delicious so i thought i would share :)

7 large eggs
3 rashers of bacon
1/2 doz mushrooms
1 cup frozen peas
1/2 onion
1 portion spinach (roughly 3 tablespoons)
1 carrot
1 brocolli stalk
1 small sweet potatoe
2 cups grated tasty cheese
2 garlic cloves
2 spring onions to garnish
- whatever condiments you like

take peas out of the freezer and leave a cup of them on the bench to defrost, same with spinach if you use the frozen stuff (which i do).

crack eggs into a large mixing bowl.

chop bacon into rough squares, remove stalks from mushrooms and slice up, peel and dice onion - add these to mixing bowl.

grate carrot, brocolli stalk, sweet potatoe and cheese directly into mixing bowl.

peel garlic and using a garlic crusher add to bowl.

add the peas and spinach, whisk up all of the ingredients.

heat a large saucepan on medium and use butter instead of oil.

i use large egg rings to make the omellettes, spooning mixture into each ring. when 1 side of the omelette is cooked, take off the rings and flip the omelette.

when the omelettes are cooked garnish with spring onion and serve. you can eat them with sweet chilli sauce and sour cream, or with mustard and tangy mayo... whatever condiments your heart desires ;)

you can also make a salad to go with the frittata's. you could add chilli, capsicum, spices or other extra ingredients to the omelettes themselves, this is a very simple and easily adapted recipe.

Pickled Onions

Jane's recipe for Home Made Bum Hummas



I only usually make a Medium jar at a time, but you can increase amounts accordingly for larger batches...

200 grams pickling onions
1 large red chili
50 grams sea salt *not iodized or table salt
1/4 of a cup of raw sugar
Approx 250 mils white wine vinegar *must be 6% acidity
Whole peppercorns *black, green & red
1/2 tsp each of paprika, coriander & curry powders
1 tbsp minced garlic

1st clean and sterilize your jar and set aside.

The onions need to be brined for 24 hours in the fridge...

Dissolve 50 grams of sea salt in 500 mls of water in a sauce pan, pour into a plastic container and allow to cool. Put peeled and cleaned onions into the brine and cover; refrigerate for 24 hours.



Strain onions, pat with paper toweling and place into your sterile jar.

Heat white wine vinegar in a saucepan till almost boiling and dissolve the sugar. Add peppers and spices and stir and lower heat. Chop chilli roughly and throw in pot with garlic. Take the mixture off heat and allow to cool.

Poke some bay leaves into the jar of onions and fill with cooled spiced vinegar, leaving a 2 centimeter gap at the top of the jar.

Remember to leave the onions for 3-4 weeks before eating them!



*you can use 3 tablespoons of honey instead of the sugar and other spices such as clove and cinnamon can be used as well.
