2 cups diced celery (28)
lentils, 1 can (193 cal x 2 = 386)
chickpeas, 1 can (200 cal x 2 = 400)
tomato sauce, 1 can (20 cal per 60 ml, 213 ml = 72)
tomatoes, 1 can (20 cal per 125 ml = 128)
2 cups water
1/4 cup molasses (200)
1/2 cup (white wine) vinegar (0)
1 1/2 cup apricots (470)
4 1/2 cups cubed potatoes (520)
5 cups sliced cabbage (110)
1 cup broccoli (35)
1 1/2 cup cauliflower (40)

TOTAL = 2560 calories

Makes 15.5 cups.
1 cup = 165 calories

Oh dear, I only just realised I had this comment.
Anyways, that was all the ingredients, and all that you really need to do is throw them all into one big pot and simmer for...about an hour. The first time I made it, I used the amounts I listed in the post, and it made way too much, I was eating it for weeks - so I'd suggest using maybe 1/2 of the amounts of everything.
