Results from my first day in Baking & Pastry Class [03 Sep 2008|11:18pm]

Hi! I'm a culinary student here in MD, and today was the first day my baking & pastry class got to work in the kitchen. We made two loaves each - one white lean wheat, one pain de mie. These are mine:

I just got home a short while ago from class, and was able to sample both loaves - holy crap, are they good! I'v e never heard of Pain de Mie before, and I've never used this recipe for the white/wheat, so both are compltely new to me. Nom nom nom. Half of each loaf is pretty much gone already. :)

Incidentally, does anyone have any ideas as to what might have caused this:

My chef instructor said that it could have been caused by a number of things - one of the classes before ours was complaining that they had been having issues with their loaves, which seemed to be yeast-related. It was mentioned that it could also have been caused by improper or incomplete proofing, or by me failing to knead/shape the dough properly before baking. Any ideas are most welcome!

I'm new to making cupcakes (this is my second batch). They are the basic vanilla flavor, vanilla butter cream frosting with pink food coloring and various kinds of sprinkles. They were yummy :)

I'm in love with this recipe "Snickers snack cake". I found it in "Paula Deen's Chocolate Celebration" and I've made it a few times. It comes out amazing! You really don't have to add snickers, I added symphony chocolate with toffee bits, crumbled on top. The only issue is, it gets a tangy sour taste after it cools down.

Snack cake )
Makes 10-12 servings
 
1 cup butter, softened
1 cup sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
Chocolate frosting (recipe follows)
 
1. Preheat oven to 350 degrees.  Line a 9 inch baking pan with heavy-duty aluminum foil.  Lightly grease foil.
2. In a large bowl, combine butter and sugar.  Beat at medium speed with an electric mixer until fluffy.  Add eggs, one at a time, beating well after each addition.  Beat in vanilla. 
3. In a small bowl, combine flour, cocoa, baking powder, and salt.  Gradually add to butter mixture, beating until combined.  Spoon batter into prepared pan.  Bake for 20-25 minutes or until a wooden pick inserted in center comes out clean.  Spread chocolate frosting over hot cake.  Let cool completely.  Cut into squares to serve.
 
Chocolate Frosting
Makes about 1 cup
 
1/4 cup butter
2 tablespoons unsweetened cocoa powder
3 tablespoons buttermilk
2 cups confectioners' sugar
3 (2.07 ounce) Snickers candy bars cut into 1/2 inch pieces
 
In a medium saucepan, melt butter over medium-low heat.  Add cocoa and buttermilk, whisking until cocoa dissolves.  Gradually whisk in confectioners' sugar until smooth.  Stir in Snickers bars.  Immediately spread over hot cake.

Hello everyone! I couldn't help but join this community, I'm a huge baking fan. I'm horrible at making stuff like pretzels & cresent rolls. I got the biscuits & cinnimon rolls down, but anything else that involved yeast...didn't work.

Everyone's favorite is these double chocolate mini kiss cookies from the Hershy's book. 

Anyways I would love to make friends, so please add me if you'd like.

 I want to bake fortune-cookies for an upcoming pre-marathon pasta party and put running affirmations inside.  I've never done these before and I have a recipe for chocolate fortune cookies.  If anyone has made these, do you have any tips?  I'd imagine they're pretty fragile, so insight about how to keep them whole would be appreciated.
