I made oven baked chicken and oven roasted potatoes last night. Everything could have been a little crispier, but overall was not bad. I think if I had used the cast iron skillet for the potatoes they would have come out a little better - or maybe less olive oil coating. They smelled really good, though, and I do think if they had turned out crispier they would have been really tasty instead of passable.
The chicken - flour with seasoning, baked in butter. Again, not a real crispy sort of set-up, and that might gone better had I had smaller pieces of chicken.
Tonight we're having tacos and I'm going to try to make 'em, see how it goes.
