I feel optimistic. I feel that everything worked out the way I wanted it to. Maybe I will write more later, but I have work in a couple hours.

Today is my friend Leti's birthday party. In honor of the choice in Greenpoint venue, The Diamond, we christened Elizabeth Taylor patron saint and called it "White Diamonds." You know, "These have always brought me luck" 80's perfume. Everyone is being told to wear white. There will be white decorations and foods (fancy cake, cupcakes, snacks of all varietals) and diamond themed art and streamers. To top it off, James is setting up a DIY photo booth. Oh, and the whole night will be coupled with a black light, so it will look epic.


I. Can't. Wait.


I am making a mix of late 80's / 90's party jams (Crystal Waters, Dandy Warhols, En Vogue, L'trimm, Harvey Danger, Dee-Lite). I am mostly looking forward to reliving 1990 talent show and gym class synchronized dance numbers to "Cannonball" and "Gonna Make You Sweat"

My parents are visiting this week so we've been touring around Oregon. So far we've been at the coast. It's so beautiful I don't want to leave! The one thing I really miss about living in Portland Maine is living by the ocean. However this Portland has plenty of things to make up for it being landlocked!

I have a bunch of casual clothes that I would think would be very much in need at a woman's shelter, since I am guessing that 4x and 5x are hard to find. But, everyone I have looked up doesn't seem to want clothes. Do you have any suggestions?

Smokey Miso Tofu

I hate it when I order a tofu sandwich somewhere, and it pretty much just tastes like (or actually is) blocks of watery, plain tofu stuffed between two pieces of bread. What’s up with that? You might as well be eating a wet, mushy sponge. I love me some tofu, but you got to treat it right, you know?

So I was thinking about tofu, and imagining thin slices of flavorful goodness to stuff into sandwiches.  I knew wanted to use miso as the base for the flavor.  The first sauce I mixed together used a bit of maple syrup, which seemed like a good idea until I tasted it.  Something about the combination of red miso and maple syrup did not sit well with me, so down the drain it went.  I moved on to pure, unadulterated sugar, a twist of lemon, a splash of tamari… I was definitely getting close.  I scooped in a little bit of nooch (nutritional yeast, aka vegan pixi dust) and liquid smoke and it was finished.  It’s a dead-simple marinade, tangy, salty, smokey and rich.  I wanted eat it like a soup.

I thought some pan-frying was in order, but when I heated up my cast-iron skillet and proceeded to burn all of the sauce right off the tofu, I decided the oven was a better choice.  The oven baked the flavor into the tofu, and 20 minutes was all that was needed since the slices were so thin.

This tofu will keep well, so it’s nice to make a whole block and set it aside for sandwiches, salads, or.. umm… snacking directly out of the fridge.

Smokey Miso Tofu

Smokey Miso Tofu
Makes 18-20 Thin Slices

2 Tbs Red Miso
2 Tbs Lemon Juice
2 Tbs Sugar
2 Tbs Tamari/Soy Sauce
1 Tbs Nutritional Yeast
1/4 tsp Liquid Smoke

1 Tub Extra/Super Firm Tofu, drained and pressed

Preheat the oven to 425º F.  Wrap your drained tofu in a few paper towels, then again in a terry cloth bar towel.  Press with something heavy - a cast-iron skillet, a plate with some cans on top, etc, for 10-20 minutes.

Meanwhile, mix the marinade together.

Unwrap the tofu and make many thin, width-wise slices with a large knife.  I got 18-20 slices out of one block of tofu.  They’ll look something like this:

Thin Sliced Tofu

Line up your slices on a baking sheet topped with a non-stick baking mat. Brush both sides of the tofu with the marinade.

Smokey Miso Tofu - Basting

Let the slices absorb the marinade for 10 minutes or so, then brush just the tops again. Bake for 20 minutes at 425º F. Remove from oven and let cool on the sheet. The tofu should be darkened around the edges, but not burnt. Use immediately or refrigerate for later use.

Smokey Miso Tofu - After Baking

I’m a simple girl, so some vegan mayo, baby spinach, and sourdough toast were all I needed to make a delicious sandwich. Whatever your favorite sandwich fixin’s are will go great, most likely. This would tofu would make a nice vegan BLT!

Now that’s a tofu sandwich!

I always love a good coffee or crumb cake. It is actually quite a weakness of mine, especially due to the fact that they are widely accepted as a breakfast food (as I have probably mentioned many times, I adore sweets in the morning). I also quite enjoy the process of making them- crumbling up a beautiful topping, or streusel, with my fingers and sprinkling it along the top of a cake batter. I find it almost therapeutic.

I have had many successes in making vegan coffee cakes, since they usually do not require an egg replacer and soy margarine works beautifully as a replacement for the butter that is most frequently used in the topping. The recipe I used yesterday morning comes from Lolo's blog and really makes the ultimate crumb cake. These aren't the teeny puny crumbs I had seen in the past; they are the real deal: sweet, big, and perfect.

Instead of copying the recipe here, I have decided to just link you over to the original post, since Lolo has some great images and details of the crumb-making process that I followed step-by-step. So head over there, bake it, and enjoy this beautiful and delicious crumb cake.

~ I am very not in the present this morning. I received an email today from an old friend. He and 2 of his best friends and I were inseparable for about a year when I was 19. In a way I was in love with all of them and did date each of them at one time. I haven't spoken to any of them for over 20 years. The email today updated me a bit on all of their lives (although he has lost touch with the other guys) and it so strange after all these years to have knowledge of what their lives have entailed; jobs, marriages and ages of children. I am left with new data to process and the odd temporarily empty feeling of not having children.

~ I have been posting more on PonyBoy Press lately.

~ every once in a while I do a search for my full name. I published under it for a short time. My poem in Fat!So? is under my full name. I learned today that you can read the whole book of Fat!So? online on Goggle books. I also read a lot of the short story that I won honorable mention for (they were so proud to tell me they created that category for me. I was unimpressed. I expected to win), which is still online. I think I have only entered a few contests. This was from 1996 or so. I still like reading it, although there are definitely a number of things I would change. Today, this part really struck me. The age of the parents in this story are 39! I wrote this mostly when I was in my late twenties.

The day before I told Frank yes I spent a long time up in the attic looking at Momma and Poppa's wedding albums. The piece of petrified cake in a glass jar. I remember wanting to open it and try it when I was a kid. It stays whole and gray, like some ancient fossil. What did it look like when they put it in that mason jar, did they think it would stay white and pretty, and how did they manage to get no frosting on the jar's sides. I turned it around and around in my hands, almost trying gently to break it apart, but it just softly thuded each time. I look at the pictures of them, The big 8xlO's in black and white matte, with the cake in the corner, this cake. I can't match them up. Just like I can't match up the sweet, fresh-faced, thin smiling kids with my weary round parents. They looked so young. Too young. Momma was 16. I can't even keep track of all the ways I've changed since I was 16. But since she was 16 she has been here, in this house with that boy in the pictures. For 23 years. It makes me feel like she must have no feeling left, no desire of her own left that existed before Poppa. What happens when either of them stands alone in the middle of a cool summers evening. The kind of evening that echoes giggles, and wind playing in your hair while you drive away from town. The kind of night breezes that kiss your bare shoulders and make you expect first love and lemon cokes around the corner. Do they allow themselves the memories, even the night air?

Frank says I'm too romantic. That most people don't think about these things. He laughs and makes some wisecrack when I tell him stuff like this. Not in a real mean way, cause he does love me. I know that. But, do I spend my life writing these things in letters I never send. Will I end up at forty-five not noticing the whisperings of the summer breezes.


My grandparents had a piece of cake in a jar like that. Whenever I would visit I would always want to open up the cedar chest and look at the old photos and check out that cake in the jar.
