tonight I made the most heavenly thai green curry that I think I've ever eaten - in a thai restaurant or otherwise. it was SO creamy and coconutty, lots of veg, lovely perfectly curry taste and some beautiful coconut rice (as well as a thai carrot-shallot salad...which got eaten before being photographed..whoops!)
it couldn't have been easier, I think it took me about 20 minutes from start to finish. my delicious (vegan!) thai green curry looks a little something ( like thisCollapse )
