Kiufteta (Bulgarian meatballs)
1 lb. ground beef
1 onion
1/2 green or red pepper
1 tomato
1 egg
1 shredded potato (optional)
salt and pepper to taste
In large bowl, combine beef, chopped onion, chopped peppers, cubed tomato, egg, and potato. Add seasoning to taste. Mix well. Form into small round balls (1/2 hamburger size). Fry the meatballs or cook on a George Foreman.
Apple Muffins
1 1/2 cups flour
3/4 cup sugar
2 tsp. baking powder
1/2 tsp. salt
milk
1 egg
3 cups apples, peeled and finely chopped
1/3 cup oil
3 tsp. cinnamon
Put oil in a 1 cup measuring cup. Add the egg and fill the cup the rest of the way with milk. Pour over dry ingredients. Stir to moisten and blend in apples. Pour into greased muffin tins. Bake at 400 for 20 minutes.
Applesauce Muffins
1 1/2 cups flour
3/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1 tsp. allspice
1/2 tsp. nutmeg
1 cup sugar
1/2 cup oil
1/2 cup unsweetened applesauce
1 egg
Mix thoroughly sugar, oil, applesauce, and egg. Mix together the dry ingredients and add to the wet ingredients. Stir until moistened. Pour into greased muffin tins. Bake at 400 for 15-20 minutes.
Blueberry Muffins/Coffee Cake
2 cups flour
2/3 cup sugar
1 tbsp. baking powder
1 1/2 cups blueberries (washed)
2 eggs
1/2 cup milk
1/2 cup melted butter
1/2 tsp. salt
shake or two of nutmeg
In large bowl, mix flour, sugar, baking powder, salt, and nutmeg. Add blueberries; stir to coat evenly. In small bowl, melt butter, add eggs and milk. Beat slightly with fork. Add to blueberry mixture; stir until just blended. Fill greased muffin tins. Bake at 400 for 15-25 minutes.
Variation: Blueberry Coffee Cake
Instead of filling muffin tins, fill a 9" square greased pan. Bake at 400 for 30-35 minutes or until toothpick inserted into center comes out clean.
Chicken Broccoli Bake
1 1/2 lbs. fresh broccoli
2 1/2 cups cooked chicken, cut up
2 eggs
1/2 cup mayonnaise
1/2 cup milk
1 cup shredded cheese
1 can cream of mushroom or chicken soup
1/2 cup bread crumbs
2 T. melted butter
Cook broccoli in salt water and drain. Place broccoli and chicken in 9x13 baking dish. Beat eggs and add milk, mayo, soup, and cheese. Pour over broccoli and chicken. Combine bread crumbs and melted butter and sprinkle evenly over top. Bake uncovered at 350 for 30 minutes.
Chicken Stuffing Bake
1 box stuffing mix (Kellogg's Croutettes)
4 skinless boneless chicken breast halves (1 lb. +)
paprika to taste
1 can cream of mushroom soup
1/3 cup milk
parsley to taste
Mix stuffing with 1 1/4 cups boiling water and 4 tbsp. margarine. Spoon stuffing across center of 9x13 baking dish. Place chicken on each side of stuffing. Sprinkle paprika over chicken. Mix soup, milk, and parsley. Pour over chicken. Bake covered at 400 for 30 minutes or until chicken is no longer pink.
Chicken Parmesan
1/2 of a 26-oz. jar of marinara sauce
4 boneless skinless chicken breast halves
2/3 cup shredded mozzarella cheese
1 tbsp. shredded parmesan cheese
1/4 cup Italian style bread crumbs
2 tbsp. olive oil
Heat oven to 350. Pour marinara sauce evenly on bottom of ungreased 2 qt. baking dish. Place chicken breasts over sauce. In small bowl, combine cheeses, bread crumbs, and oil. Mix well. Sprinkle evenly over chicken. Bake at 350 for (probably longer than) 30-35 minutes oruntil chicken is fork tender and juices run clear.
Cheesy Potatoes
2 lbs. frozen hash browns (southern style - 1 large bag)
16 oz. sour cream
1 cup shredded cheddar cheese
1 can cream of chicken soup
onion to taste
salt and pepper to taste
1/2 cup melted butter
Mix all together in 9x13 pan. Mix 1 cup crushed cornflakes with 1/4 cup melted butter and spread on top. Bake covered at 350 for 1 hour. Let set 10 minutes before serving.
Hamburger Casserole
1 lb. ground beef
1/2 package elbow macaroni (about 1 cup)
2 8 oz. cans tomato sauce
1 (2 1/2 oz.) can sliced mushrooms
2 cups shredded cheddar cheese
Brown beef, drain grease. Cook macaroni as directed on box. Mix beef, macaroni, mushrooms, tomato sauce, and 1/3 of the cheese in a casserole dish. Top with remaining cheese. Bake until bubbly (about 45 minutes at 350).
Chicken Pasta Primavera
2 cups cut up fresh vegetables
4 oz. linguine, cooked and drained (about 2 cups)
1 + cup cooked chicken breast strips
1/3 cup grated parmesan cheese
Cook and stir vegetables in 2 tbsp. olive oil in large skillet for 5 minutes or until tender-crisp. Add chicken breast strips and linguine. Cook 2 minutes or until thoroughly heated. Stir in cheese.
