I just sneezed and looked at the calendar and CHRISTMAS IS THIS WEEK?! No, no, no, I don't believe it. As much as I've been stressed from shopping all over the GTA, all day, everyday, I love Christmas and I don't want it to be over! But, I'm sooo ready for the New Year. The perfect topping to my new mentality. I'm ready to change EVERYTHING. This only means I have a lot of preparation to do. Ttyl!

This is my yule log (and my first post here). The button mushrooms are almond paste, the shelf mushrooms are dark chocolate peanut butter cups, the dirt is ground up oreos. The filling is whipped cream with some buttercream frosting folded in, for stiffness, the frosting is chocolate buttercream with some whipped cream folded in for flufflyness. The cake is a standard chocolate roll cake, like the recipes already posted, and available all over online.

friday , december 18th .
the first unofficial day of christmas break. the initial plan was to go NOT go to school, wait for taylor to lie to her grandmother about going to school then wait for her to head home THEN wake up, meet up with adrian varghese & reach taylors house to make some home made cookies made from scratch. :) LOL. sounds like a good plan. unfortunately, things didnt go as we wanted them to. taylor got home to a mother who did not want us to come over on that specific day. x ) fail ..
that morning, gerico had been txting me to go dt with him to go skating with people. i didnt really feel like going cos .. one, it would be awkward cos francis was goign to be there LOL & 2, because i felt like it was going to be a flop. whatever, i hadnt chilled with gerico in a month and a half when usually we chill AT LEAST once a month . we spent the whole summer together and NOT seeing each other was kinda weird. plus, i had money in the baaaaank + i missed gerico. :) haha. so ... we agreed wed meet at finch for 2. HAHA, when i was about to leave ( 1 45 ) i thought to myself, " gericos gnna kick my ass for being late ! LOL " . right then, i got a txt msg, " ... im gnna be kinda late. LOL " HAHAHAHA. so im like .. " me too. LOL ! " take in how i got on the bus at 2 and got to finch at 230 RIGHT when gerico got there. i think thats proper. x) idk, im weird. thank goodness i caught the express bus. :)
from there, we went to dundas .. where we went to amc to eat. x) LOL .. well, more like .. HE ate & i watched cos i had already eaten at home. it took gerico like an hour and a half to eat his food. ugh, thats what i hate about him. he takes SO long to eat. grr, slow eaters ! while we were eating, i was getting bare texts while charging my phone.. which was kinda embarassing .. cos my phone was plugged into some next pole. x)
LMFAO. after we ate, we found out my bank card was being GAY. i had put in $100 the day before and it wasnt letting me take anything out. gerico was cheezed so he made me go talk to the teller when i told him whatever. LMAO. i guess i just wasnt gnna spend today, i thought. but then LMAO .. gerico pushed me to go to the teller where she informed us that we had to wait 6 business days till i could withdraw that money. x) LOL, SOME POLICY ! i was kinda cheezed .. and i asked her if she realized 6 business days would be christmas eve. that 100 was for christmas shopping ... so wtf ? she said srrry .. and i felt bad for her anyway cos she was nice & filipino and all. LMFAO ! racist .. but yeah.
so then we just went to harbour front. on the way there, gerico insisted on me skating. obviously i couldnt ? i didnt have any friggen money. i had given all but $2 to charity when we got off from dundas. that remaining $2 was for bus fare home. gerico said hed spot me .. but i felt bad cos like .. i couldnt pay him back right away. & what if he wanted to eat ? -___-" i couldnt give him anything. but he was really nice .. so he just sat with me the whole time & we'd sing whatever song we knew that would come on the radio while we were watching them skate.
haha, it was kinda flop though .. like .. nobody wanted to skate .. & half the people had come back from smoking up .. so they were annoying. LMAO. & they were all very pressuring .. they wanted to take someones " lung virginity " . ugh.. shut up. i was so extra cos i was like .. one of the only people who hadnt tried it. f that . i wanted to go home ! but yeah .. ended up leaving at 10 & getting home at 12. my brother is so fucking rude, btw. liiiiiiiiiiiiiiiiiiiiiiiike really . erks. anyways .. flop. LOL !

| Recipe Request: Chocolate cake |

Hey guys,
I was at a 21st last night and the birthday cake was just the perfect chocoate cake, or at least my idea of one! (it also had a map of the world on it which was just cool ;) )
So as I'm planning multiple cupcakes for a friend's NYE party I thought I'd see if you could help me replicate it. It was.....
1. Lovely and chocolatey. Good flavour and a dark choc brown colour 2. Moist. Not a hint of dryness to it, but by this I do not mean a mudcake or a fudgy cake, and it was held in the hand no issues. It was just a nice, moist cake 3. Good consistency. I would say dense but not fudgy and fluffy enough to be cakey - actually for some reason a carrot cake comes to mind consistency wise 4. Neat. It did not crumble, did not squish or stick to the fingers and seemed firm (there's the word, firm!) enough that it would hold up well to being filled with stuff etc.
So fellow bakers, any suggestions re. this perfect chocolate base cake?

Since yesterday was an exhausting day (a midterm, 3 quizes, an organic lab and finally a very pointless excursion through the mud and the rain in the evening), I decided that rewarding myself was the best way to get me motivated to push through the final weeks the semester. Who doesn't love baked goods that feature apples? I know I do, and it's definitely Kramer's favorite kind of treat next to something made with peanut butter. The only problem is that I'm lazy and I hate having to make crusts and doughs and that kind of thing that you have to roll out or let rise. So sue me! I'm busy. That's why I love these apple streusel bars. You get all of the delicious, caramely apple-pie flavor without all the work. I added some toffee bits in with the apple mixture, too, and they got all melty and delicious. These will make you think of happy holiday memories, and the time that it takes to make these is nothing compared to a pie or a turnover or something like that. The streusel crumb topping really brings it all together, and the icing drizzled on top takes it all home for me. Go ahead and make this for your next holiday gathering, or just the next time you want something sweet. It's really easy and I bet you already have everything you need in the cupboard. So, I'm normally pretty hardcore about making everything from scratch but Kroger recently had a sale on all Duncan-Hines cake mix for a dollar a box. Which was way too awesome a deal to pass up so I grabbed a few in hopes of being able to modify them from acceptable to OMG delish. Duncan-Hines mix requires the addition of: 1/3 c vegetable oil, 3 large eggs, and 1 1/3 c water.
I thought I could try this instead: 1/3 c melted butter, 2 large eggs, 2 oz cream cheese, and 1 1/3 c milk.
Do yo think this would work? Or would it just result in some bizarre mutant cake thing? My trial run is going to be with the lemon supreme mix, which I am making lemon cupcakes with black raspberry cream cheese frosting. Lemon and raspberry gets me all sorts of happy. Doing this trail run is really important, as I will be applied the same modification to the yellow cake mix I got for my boyfriend's bday cake. His mother used to cook everything out of a box so sometimes he prefers box to homemade from scratch. His is going to be a classic yellow cake with rich chocolate fudge frosting and a chocolate ganache filling and chopped reese's on top. I can't wait to see him eat it!
Moving past the rambling, any advice on altering a box mix would be great and if my idea would work.

Hey guys,
So I've been a member of this community for a few years. I don't update all that much, because I never think to take pictures before people have begun devouring my baked goods, but this is where I always go for a lot of my recipe ideas. So a few years ago there was a brownie request post (I tried looking in the tags but I couldn't find it) and it had this link to a scanned image of "The World's Best Brownies." I'm pretty sure that was the title. I don't remember what it was from, but those are the most epicly amazing brownies I've ever had. I had it saved to my hard drive, but of course, my hard drive failed and now I'm left without the world's most delicious brownies. Does anyone remember the recipe I'm talking about?
I remember it had nearly a pound of butter, a ton of chocolate, and recommended that you let them sit for a day before eating them (a feat that is nearly impossible to accomplish). I do however, remember the taste. They were super moist and gooey and chocolatey and amazing. If anyone knows what recipe I'm talking about, I will pretty much love you forever.
Oh and so it's not entirely just a wordy post...

Sadly, I was away sick from baking lab last Friday, which meant I had no pictures of the lovely Creme Brulees, the Panna cottas and the other beautiful treats we made. However, I did bake two Yule Logs earlier this week (one chocolate and one vanilla), which were received with great delight!

Sigh...now to get off my duff and make some more cakes for tomorrow. I'll be thrilled when I finaly get to a day where I don't have to wake up early, or stay up late to finish something....I believe they call that "retirement"...lol...

 I know someone already posted a cranberry-nut biscotti entry this month, but mine's different! I chose these cookies not only for their festive colors and flavors (red cranberries, green pistachios), but also because biscotti are one of the best things to package and hold up for a very long time, which makes them the ideal thing to mail. Plus they’re the perfect thing to accompany coffee or tea, which almost everyone I know enjoys. Happy Holidays!
