I'm pretty excited about my class schedule.
Johnson & Wales runs on a trimester system, the first of which begins this Tuesday and ends before Thanksgiving break. Classes meet Monday-Thursday each week. If there is a Monday holiday then the schedule switches to Tuesday-Friday for that week. All of my Culinary Labs are 7am-1pm. Each Culinary Lab meets for 9 days straight. I have 8 days of class, & on the 9th day is the Practical (final). The next day the next class starts. I have 5 labs per trimester with some additional "academic" classes thrown in.

Culinary Labs:

-INTRODUCTION TO BAKING & PASTRY (every culinary student is required to take 2 baking/pastry labs)
September 9-22

-ESSENTIALS OF DINING ROOM
September 23-October 7

-STOCKS, SAUCES & SOUPS
October 8-22

-NEW WORLD CUISINE (a survey of several "non-western" cuisines)
October 23-November 6

-TRADITIONAL EUROPEAN CUISINE (basically classic French technique)
November 10-20

"Academic" classes meet in the afternoons throughout the trimester. I keep putting academic in quotes because they are not traditional General Education classes such as Math, Science, etc.

Academics:

-FOOD SAFETY & SANITATION MANAGEMENT
meets select Thursdays throughout the trimester (3 or 4 in all, I believe) from 1:40-3:35pm

-PRINCIPLES OF CAREER MANAGEMENT
meets Wednesdays throughout the trimester from 3:50-5:45pm
I have yet to find out if this meets every Wednesday or select days like FS&SM.

All-in-all it adds up to 18.5 credits. This will be my busiest section. The other trimesters should only be 15 credits & all Culinary Labs. The last trimester will be an internship this summer from June 2-August 15 or so.
I wanted to get the extra crap out of the way first.
That's it! I will have my degree in one year.

It's crazy for me to think that one year from now I will have a second degree, I will have chosen & started a career, & we will be married and preparing to move to the Midwest. Life moves a 1,000,000 miles per hour sometimes!

this weekend i:
-moved out of my apartment in baltimore
-ate at a fancy restaurant & flirted shamelessly with my waiter (who happens to be my boyfriend)
-knocked off a huge chunk of my right front tooth
-watched a lot of weeds & tudors
-suddenly realized that every time i come back to b-more in future i will be a visitor and not a resident

we got new puppies at the beginning of may. they were so little before we brought them home:

travis used to have a great beard. this picture makes me melt.

also cute. then he started applying for jobs & had to shave.

i'm happier than i have been in a long time.
the long distance thing no longer frightens me. i know we'll be fine.
he is my closest confidante and my best friend. now, more than ever before, i know that i want to be with him for the rest of our lives. we've been in love for two and a half years, and (as cheesy as it sounds) it just keeps getting better.

we're bringing our new puppies home on saturday. a boy & a girl.
it took a while, but we finally decided on names.
buddy & holly.
i never thought my parents would go for those names, but my buddy holly lovin' side (which makes up at least 80% of my inner workings) figured it was worth a shot.

here is a link to a website with pictures of the pups. the breeders call the boy lucky and the girl pinkie.

buddy is quiet, a little shy & pretty chill. holly, on the other hand, is a little ball of adventerous energy.

in other news, cara, marisa & i are throwing ourselves a party this weekend to celebrate just how awesome it is that we aren't going to coachella. it'a called the coacHELLA better than flying to l.a. party. we're making t-shirts.

it's time for me to move back to baltimore.
i'm going to take the rest of this week to pack up, next week i go to columbus, and the following week i'll finish things up.
brian's show is the 29th and i'll use that as an opportunity to say goodbye to everyone and thank them for being wonderful, unbelievably awesome friends. and i'll probably cry...a lot.
this isn't what i would consider an adult life, and had certain physical limitations not been present, i would have left in december.
i hope philadelphia and i meet again one day. i've fallen in love with her all over again.

chabana is a type of ikebana specifically for the tearoom.
it's a good class to take last semester senior year.
speaking of which, my last day of class is exactly one month from today.
