she's tore up plenty

today, i share a recipe of my own design.

as i've said, i'm quite sick. i know that garlic and lemon juice have some of the healing properties i need; i was hungry and needed something light, low in fat, yet filling and flavorful. so i bring you:

Lemon Rice with Garlic and Mushrooms

2 cloves garlic, chopped
5 mushrooms, sliced (i used italian brown)
1.5 tbsp olive oil or basting oil
1 cup cooked rice (i used long grain jasmine, and cooked it in organic vegetable stock instead of water. if you don't have any stock, mix some herbs in with the water and rice before cooking. you'll be glad you did.)
the juice of 1/2 lemon, freshly squeezed

to prepare:
Heat oil in small skillet over medium heat until it starts to smoke a little. Add mushrooms and saute for 5 minutes, stirring frequently. Season with salt and black pepper. Add garlic and saute 2 more minutes or til desired tenderness is achieved. You may need to decrease the flame, since the point is to lightly saute the garlic, not toast it. Add lemon juice and simmer 1 minute. Add cooked rice and stir the whole mixture gently over low heat for about 2 mins. Eat hot.
Serves 1 as a meal in itself, or 2 as a side dish.

my own critique: It was very, very tangy, which was what I was going for. On a different day, i probably would have decreased the lemon juice by half. I also would have liked it better with some chopped cashews or toasted pine nuts on top, but I had none on hand. This was filling, yet light; very flavorful; and quick to make. The flavor of the garlic was very mild, drowned out a bit by the lemon, so I probably could have added more. It has so many health benefits, so if you like it, go ahead and add another clove or two.
